At times, one wishes to enjoy a strong beverage while still maintaining one's wits. By separating the bonds that hold water to alcohol in your favorite brew, you can reduce the potency of the drink while maintaining its flavor. Of course, this may earn the disdain of many of the bards who pride themselves on brewing for alcohol rather than flavor, but at least it's not hard to outrun a drunken minstrel.
